Roly Poly Zucchini With Summer Stuffing Recipe

Ingredients
  • 1 c corn kernels .
  • 1/2 c grated parmesan cheese .
  • 4 scallions, sliced fine .
  • 1 medium onion, sliced fine .
  • 1 tbsp olive oil or vegetable oil .
  • 1/2-3/4 c ricotta cheese .
  • 4 medium roly poly squash (apple) .
  • salt & pepper

Directions
  • Step #1 Place squash in boiling water for 5-10 mins, till a sharp knife pierces to center easily.
  • Step #2 Remove from pot & plunge in ice water to cool.
  • Step #3 Cut off top & scoop out centers with a melon baller, being careful to leave a sturdy shell.
  • Step #4 Chop scooped out squash & reserve.
  • Step #5 Saute onion in oil till transparent.
  • Step #6 Add sliced squash & cook till liquid is cooked off.
  • Step #7 Cool filling.
  • Step #8 Blend filling with ricotta, corn, scallions & half of parmesan.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Mound filling in squash shells & top this with grated cheese.
  • Step #11 Bake on cookie sheet in 350 oven for 35-45 mins, till heated through.
