Danish Apple And Prune Cake Recipe

Ingredients
  • 25 g butter, cut into small cubes .
  • 125 g butter .
  • 100 g walnuts, sliced .
  • 125 ml whole milk .
  • 100 g almonds, ground .
  • 1/2 tsp baking powder .
  • 170 g sugar .
  • 5 tbsps sugar .
  • Topping .
  • 12 soft dessert prunes .
  • 2 green apples, cored & peeled .
  • 1 tsp cinnamon .
  • 80 g self-raising flour .
  • 1 tsp vanilla essence .
  • 2 eggs

Directions
  • Step #1 Preheat oven to 375F / 190°C.
  • Step #2 Cream together 125g butter & 170g sugar.
  • Step #3 Add well beaten aggs, self-raising flour, almonds, milk, vanilla & baking powder.
  • Step #4 Alternatively, place all these ingredients in a food processor/blender for 10 seconds.
  • Step #5 Run a spatula around the bowl & process for a further 5 seconds.
  • Step #6 Either way, place the batter into a well greased 23 cm torte tin.
  • Step #7 Stone prunes & coarsely chop & place on batter.
  • Step #8 Mix walnuts with 2T sugar & spoon over the batter.
  • Step #9 Thinly slice apples & place over the top of the walnuts.
  • Step #10 Bake the cake for 40 mins.
  • Step #11 Carefully remove the cake from the oven by pulling out the rack it is sitting on.
  • Step #12 Quickly sprinkle it over the apples 3T sugar, cubed butter & cinnamon.
  • Step #13 Slide the cake back into the oven & bake for a further 15 to 20 mins or until a skewer comes out clean from the centre of the cake.
  • Step #14 Serve the cake with whipped cream.
