Chicken In Curry Sauce With Fruit Recipe

Ingredients
  • 2 chicken breasts, cooked & shredded .
  • 5 tbsps unsalted butter .
  • 4 c cooked rice .
  • 1/4 c dried cherries (optional) .
  • 1 small onion .
  • 1 c heavy cream or half-and-half .
  • 1 ripe peach or nectarine .
  • 1 c grapes, sliced in half .
  • 1 large banana .
  • 1 tart apple .
  • 2 tbsps flour .
  • 1/2 c chicken broth .
  • 2 tbsps yellow curry powder (or to taste)

Directions
  • Step #1 Melt butter In a large-ish, heavy skillet.
  • Step #2 Finely chop onion, & let simmer in the butter until soft but not brown.
  • Step #3 Lower heat to medium.
  • Step #4 Cut all the fruit into small pieces.
  • Step #5 Add all fruit except the cut up bananas at this point.
  • Step #6 Stir carefully until warmed through.
  • Step #7 Add the flour & stir until it's been incorporated, about one min.
  • Step #8 Add curry & chicken broth.
  • Step #9 Add the bananas.
  • Step #10 Let simmer on low heat for five mins.
  • Step #11 Add cream & stir.
  • Step #12 Add cooked shredded chicken breast.
  • Step #13 Let it all come back to a low simmer.
  • Step #14 Serve over rice.
