Italian Wafers Recipe

Ingredients
  • 1 c all-purpose flour .
  • 1 dash red peppers .
  • 1/2 tsp dried oregano .
  • 1/2 c shredded mozzarella cheese, 2 oz .
  • 1/2 c butter or margarine, softened .
  • 1 pinch salt .
  • 1/4 c parmesan cheese, 1 oz .
  • 1 tbsp sliced pimentos

Directions
  • Step #1 Combine first 3 ingredients In a large-ish bowl, stirring to mix.
  • Step #2 Stir in flour & next 3 ingredients.
  • Step #3 Add sliced pimiento & mix well.
  • Step #4 Divide dough in half; shape into two 6 inch rolls.
  • Step #5 Cover up & chill several hrs or overnight.
  • Step #6 Slice dough into 1/4 inch slices, place on lightly greased baking sheet.
  • Step #7 Bake wafers at 375 for 10 to 12 min.
  • Step #8 Cool completely on wire racks.
