Steamed Fresh Mussels In A Creamy Broth Recipe

Ingredients
  • sea salt .
  • 1/2 bunch fresh parsley .
  • 1/3 c sour cream .
  • 1 onion .
  • 1 garlic clove .
  • crusty bread, for accompaniment .
  • fresh ground black pepper .
  • 2 c vegetable stock .
  • 1-2 celery rib .
  • 2 lbs mussels .
  • 1 tbsp canola oil

Directions
  • Step #1 Wash the mussels, scrubbing them thoroughly & carefully removing any attached hairy filaments.
  • Step #2 Discard any shells that are open! Peel the onion & slice into rings.
  • Step #3 Trim & wash the celery & cut into slices.
  • Step #4 In a large skillet, heat the oil over med-heat/flame.
  • Step #5 Add the onion, & saute until translucent.
  • Step #6 Add the celery & sautee briefly.
  • Step #7 Peel & crush the garlic & add it to the skillet.
  • Step #8 Add the mussels & vegetable stock & bring to a boil.
  • Step #9 Cover up tightly & cook for about 8 mins.
  • Step #10 Remove the mussels when all the shells have opened & keep warm.
  • Step #11 Pass the liquid through a fine strainer into a clean saucepan.
  • Step #12 Cook over high heat until reduced to about 1/3 of original volume.
  • Step #13 Stir in the Sour Cream & just heat through.
  • Step #14 Spice up with salt & pepper.
  • Step #15 Wash & shake dry the parsley, remove the leaves from the stalks & chop the leaves finely.
  • Step #16 Sprinkle top the parsley over the sauce.
  • Step #17 Place mussels in sauce & serve hot with crusty bread for dipping.
