Cherry Almond Muffins Recipe

Ingredients
  • 1/8 tsp cinnamon .
  • 1/3 c sliced almonds, unblanched or blanched .
  • cooking spray .
  • 1/4 c Splenda sugar substitute or sugar .
  • 3 large egg whites .
  • 2 1/2 tsps almond extract .
  • 1 c plain nonfat yogurt .
  • 1/4 c sugar .
  • 2 c whole wheat flour .
  • 1 tsp baking soda .
  • 2 tsps baking powder .
  • 1 c maraschino cherries, drained & halved

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Lightly spray muffin tins with cooking spray.
  • Step #3 (You can also use liners but the direct contact with the pan gives the exterior a crisper exterior.
  • Step #4 ) In a large bowl mix the flour, cinnamon, Splenda, sugar, baking powder & baking soda.
  • Step #5 In a medium bowl, beat egg whites until they are well-frothed but not stiff.
  • Step #6 If you have mereugue, you’ve gone to far.
  • Step #7 Add the yogurt & almond extract & beat a few more seconds.
  • Step #8 Add the liquid mixture to the dry ingredients, mix until just mixd.
  • Step #9 Over mixing will result in some tough puck-like muffins.
  • Step #10 Gently fold in the cherries & almonds.
  • Step #11 Fill muffin c two-thirds full & bake for 18-20 mins.
  • Step #12 A toothpick inserted in the center of a muffin should come out clean.
  • Step #13 Serve warm.
  • Step #14 I like mine with Brummel & Brown spread.
