Oriental Meatball Salad Recipe

Ingredients
  • 1 lb ground beef .
  • 2 beaten eggs .
  • rice noodles (optional) or chow mein noodles (optional) .
  • 1/2 c milk .
  • shredded lettuce, for serving .
  • 1/2 c dry white wine .
  • 2 medium green peppers, cut into 1/2 inch squares .
  • 2 stalks celery .
  • 2 medium carrots, sliced .
  • 2 tbsps cooking oil .
  • 3 c soft breadcrumbs .
  • 1 (8 oz) can pineapple chunks .
  • 2 tbsps cornstarch .
  • 1 tsp onion salt .
  • 2 tomatoes, cut into wedges .
  • 2 tbsps soy sauce .
  • 1/2 c vinegar .
  • 1/2 c packed brown sugar

Directions
  • Step #1 In a large bowl mix eggs & milk.
  • Step #2 Stir in bread crumbs.
  • Step #3 Add beef & mix carefully.
  • Step #4 Shape into 3/4 inch meatballs.
  • Step #5 In skillet cook meatballs in oil about 10 mins or until done.
  • Step #6 Turn frequently.
  • Step #7 Drain.
  • Step #8 Drain pineapple & reserve juice.
  • Step #9 Add water to juice to make ¾ c liquid.
  • Step #10 In bowl mix pineapple chunks, carrot, green pepper, celery & meatballs.
  • Step #11 In small saucepan mix brown sugar, cornstarch.
  • Step #12 Stir in the pineapple liquid, wine, vinegar & soy sauce.
  • Step #13 Cook & stir until thickened & bubbly.
  • Step #14 Pour hot dressing over meatball mixture.
  • Step #15 Cover up & chill in the fridge.
  • Step #16 To serve carefully stir this tomato wedges into meatballs (or reserve tomatoes for garnish around salad).
  • Step #17 Place shredded lettuce on each of 4 serving plates.
  • Step #18 Carefully spoon meatball mixture on top.
  • Step #19 Sprinkle top with rice or chow mein noodles if desired.
