Pecan Encrusted Perfect Pork Loin
Ingredients
35-40 small wonton wrappers .
1 tsp yellow mustard .
2 tbsps finely sliced red bell peppers .
2 tsps worcestershire sauce .
1/4 c finely sliced scallions .
1 1/2 tsps kosher salt .
1 egg, lightly beaten .
2 tsps ketchup .
1 tsp light brown sugar .
1 1/3 c chicken stock, divided .
1/2 lb ground pork .
water, for sealing wontons .
3-4 tbsps vegetable oil, for frying .
1/2 tsp fresh ground black pepper .
1/4 tsp cayenne pepper
Directions
Step #1 Preheat oven to 200 degrees F.
Step #2 Combine the first 11 ingredients in a medium-size mixing bowl (pork through cayenne).
Step #3 Set aside.
Step #4 To form the dumplings, remove 1 wonton wrapper from the package, covering the others with a damp cloth.
Step #5 Brush 2 of the edges of the wrapper lightly with water.
Step #6 Place 1/2 rounded tsp of the pork mixture in the center of the wrapper.
Step #7 Fold over, seal edges, & shape as desired.
Step #8 Set on a sheet pan & cover with a damp cloth.
Step #9 Repeat procedure until all of the filling is gone.
Step #10 Heat a 12-inch saute pan over med-heat/flame.
Step #11 Brush with vegetable oil once hot.
Step #12 Add 8 to 10 potstickers at a time to the pan & cook for 2 mins, without touching.
Step #13 Once the 2 mins are up, carefully add 1/3 c chicken stock to the pan, turn the heat down to low, cover, & cook for another 2 mins.
Step #14 Remove wontons to a heatproof platter & place this in the warm oven.
Step #15 Clean the pan in between batches by pouring in water & allowing the pan to deglaze.
Step #16 Repeat until all the wontons are cooked.
Step #17 Serve as soon as possible.
