Linguine With Shrimp And Tomatoes Recipe

Ingredients
  • 1 1/2 c sliced fresh parsley .
  • 1/2 lb cremini mushrooms, sliced .
  • salt .
  • 1 lb feta cheese, crumbled .
  • 10 tbsps extra-virgin olive oil .
  • 1/2 tsp dry crushed red pepper (optional) .
  • 4 lbs plum tomatoes, seeded, sliced .
  • 1 1/2 c sliced fresh basil .
  • 2 c grated parmesan cheese or romano cheese .
  • 2 lbs uncooked large shrimp, peeled & deveined, tails left intact .
  • pepper .
  • 1/2 lb shiitake mushrooms, sliced .
  • 6 garlic cloves, minced .
  • 2 tbsps parsley .
  • 2 (8 oz) packages linguine, cooked al dente

Directions
  • Step #1 Salt & pepper the shrimp.
  • Step #2 In a heavy skillet over medium-high heat, sauté the shrimp in 3 Tbs oil about 3 mins until cooked through.
  • Step #3 Remove shrimp using a slotted spoon & cover to keep warm.
  • Step #4 Add 4 tbsps oil to same skillet & sauté mushrooms about 8 mins until tender.
  • Step #5 Add tomatoes through red pepper & cook, stirring, until heated through; mix in both cheeses.
  • Step #6 Toss linquine with 3 Tbs oil to coat.
  • Step #7 Add mushroom-tomato mixture to pasta & toss.
  • Step #8 Transfer linguine to a serving bowl, top this with shrimp & 2 Tbs parsley.
