Scottish Whipped Shortbread Recipe

Ingredients
  • 1 tsp vanilla extract .
  • 1 c icing sugar .
  • 1/2 c cornstarch .
  • 2 c salted butter, sofened (margarine won't do) .
  • 3 c flour

Directions
  • Step #1 Preheat oven to 350°F (180°C).
  • Step #2 Line cookie sheat with parchment paper if possible.
  • Step #3 Cream butter.
  • Step #4 Sift together icing sugar, cornstarch, & flour.
  • Step #5 Put butter, dry ingredients & vanilla in electric mixer & beat until consistency of whipped butter.
  • Step #6 May decorate with small pieces of green or red cherries or colour sprinkles.
  • Step #7 Bake at 350°F (180°C) or 15-20 mins.
  • Step #8 Stores well in covered tin.
