Chile Verde De Puerco Recipe

Ingredients
  • 4-6 tbsps all-purpose flour .
  • 1 tbsp dried oregano .
  • 1 (14 1/2 oz) can chicken broth .
  • 1 tsp black pepper .
  • 2 yellow bell peppers, seeded & cut into 1-inch squares .
  • 1 tbsp ground cumin .
  • 5 tbsps vegetable oil, divided use .
  • 6 poblano chiles, halved, seeded, sliced into 1/2-inch strips .
  • 2 lbs tomatillos, husked, cored & quartered .
  • 1 cinnamon stick .
  • 2 tsps orange zest, grated .
  • 1 (12 oz) can beer .
  • 3 lbs boneless pork shoulder, cut into 1 1/2-inch pieces .
  • 1 tsp salt .
  • 3/4 c cilantro, sliced .
  • 8 garlic cloves, crushed .
  • 2 large onions, sliced

Directions
  • Step #1 Spice up pork with salt & pepper; dust with flour.
  • Step #2 Heat 4 Tbl oil in Dutch oven, brown pork in batches, transferring pork to bowl when browned.
  • Step #3 Heat remaining Tbl in pot.
  • Step #4 Add onion, until soft, saute 3 to 4 mins, stir in the garlic & saute 1 min more.
  • Step #5 Add tomatillos, cumin, oregano, cinnamon & pork.
  • Step #6 Add beer & broth; bring to a boil, 2 hrs, lower heat & let simmer, partially covered, stirring occassionally.
  • Step #7 Add chiles & yellow pepper, simmer partially covered for 30 to 45 mins more, until chiles are tender.
  • Step #8 Discard cinnamon stick.
  • Step #9 Stir in cilantro & orange zest.
