Banana Crunch Cake Recipe

Ingredients
  • 1/2 c butter .
  • 1/2 c sour cream .
  • 1 1/2 c sliced very ripe bananas .
  • 1 c coconut .
  • 1/2 c sliced pecans .
  • 3/4 c firmly packed brown sugar .
  • 1 (18 1/4 oz) package yellow cake mix with pudding .
  • 4 eggs .
  • 1/2 c flour .
  • 1 c rolled oats

Directions
  • Step #1 Heat oven to 350.
  • Step #2 Grease & flour 10 inch tube pan.
  • Step #3 In medium bowl, rolled oats, coconut, mix flour, brown sugar & pecans; mix well.
  • Step #4 Using fork or pastry mixer, cut in butter until mixture is crumbly; set aside.
  • Step #5 In large bowl, mix bananas, sour cream & eggs; mix until smooth.
  • Step #6 Add cake mix; beat 2 mins at high speed.
  • Step #7 Spread 1/3 of batter in greased & floured pan; sprinkle with 1/3 of coconut mixture.
  • Step #8 Repeat layers 2 more times using remaining batter & coconut mixture, ending with coconut mixture.
  • Step #9 Bake at 350 for 50-60 mins or until toothpick comes out clean.
  • Step #10 Cool upright in pan 15 mins; remove this from pan.
  • Step #11 Place on serving plate, coconut side up.
  • Step #12 Cool completely.
