Turkey Tostadas Recipe

Ingredients
  • 1/2 tsp salt .
  • 1 (16 oz) can kidney beans, rinsed & drained .
  • 4 drops hot pepper sauce .
  • 3/4 c sliced fresh mushrooms .
  • 2 garlic cloves, minced .
  • Toppings(all optional) .
  • 1 c sliced green peppers .
  • 2 c shredded lettuce .
  • 1 1/2 c reduced-fat Mexican cheese mix .
  • 1 c salsa .
  • 1/2 c sliced onions .
  • 1 tsp ground cumin .
  • 1 1/4 lbs lean ground turkey .
  • 1/2 c frozen corn, thawed .
  • 16 corn tostadas (5 inches) .
  • 1 (4 oz) can sliced green chilies .
  • 1/2 c minced fresh cilantro .
  • 1 c sliced tomatoes .
  • sour cream .
  • 1 tbsp chili powder

Directions
  • Step #1 Cook turkey over med-heat/flame In a large-ish nonstick skillet until no longer pink; drain.
  • Step #2 Add onion, green pepper, & garlic; cook & stir for about 3 mins or until onion is slightly tender.
  • Step #3 Add mushrooms & cook 1 min longer.
  • Step #4 Stir in salsa, chilies, chili powder, cumin, beans, salt & hot sauce & cook for about 5 mins.
  • Step #5 Stir in cheese & corn & cook this until heated through.
  • Step #6 Assemble tostadas by spreading about 1/3 c filling over shells.
  • Step #7 Top with whatever toppings you like.
