Sweet Gingered Prawn Rolls Recipe

Ingredients
  • rice paper .
  • 8 garlic cloves, crushed .
  • 100 g fresh ginger, grated .
  • 80 ml sweet chili sauce .
  • baby spinach leaves .
  • 80 ml chicken stock .
  • 2 tbsps lime zest, finely grated .
  • fresh coriander .
  • 1 kg prawns, uncooked .
  • 2 tbsps honey

Directions
  • Step #1 Shell & devain prawns, & chop them roughly.
  • Step #2 Combine prawns, & put in the fridge at least three hrs, ginger, garlic & your sweet stuff In a large-ish shallow bowl, or until you need them.
  • Step #3 Heat oiled pan, & cook the prawns until they're just right - remember, cooking prawns too long will make them rubbery.
  • Step #4 Take them off the pan while keeping all the liquid they might have left behind in the pan.
  • Step #5 Place the chili sauce & the chicken stock to the pan, & let simmer until it thickens.
  • Step #6 Pour over the prawns.
  • Step #7 Take one sheet of rice paper & put it In a large-ish bowl of warm water until it's soft.
  • Step #8 Take the paper out from water & place on a board, pat dry with a towel or paper.
  • Step #9 Place some baby spinach & coriander leaves in the middle of the paper, add prawn mixture to the top.
  • Step #10 Fold in top & bottom, roll from side to enclose the filling.
  • Step #11 Repeat until all prawn mixture is used - I made about 17 rolls (but it's of course dependant on the size of the rice paper).
  • Step #12 Once you let the rolls sit for couple of mins they should be firm enough to eat with your fingers, serve this with rice or dip in soy sauce.
