Mexican Casserole - 6.5 Weight Watcher Points Recipe

Ingredients
  • 1 lb extra lean ground beef (drained or rinsed!) .
  • 3/4 c nonfat sour cream .
  • 1/3 bunch sliced fresh cilantro, to taste (or less (or more) .
  • 8 corn tortillas .
  • 1 (15 oz) can black beans (rinsed & drained) .
  • 2 c sliced fresh tomatoes (or 15 oz can sliced canned tomatoes) .
  • 1 (1 1/4 oz) package taco seasoning mix .
  • 1 (15 oz) can kernel corn (drained) .
  • 1/3 c shredded reduced-fat Mexican cheese mix .
  • 1/2 c onions (sliced) .
  • 1/4 c sliced canned jalapeno slices

Directions
  • Step #1 1.
  • Step #2 Brown ground beef & sliced onions in large skillet; brown 10 to 12 mins or until thoroughly cooked, stirring constantly.
  • Step #3 Drain well & rinse with warm water to remove all fat; return beef/onions to skillet.
  • Step #4 2.
  • Step #5 Add corn, black beans, tomatoes, chilies/jalapenos & taco seasoning mix; mix well.
  • Step #6 Reduce heat; simmer 5 mins.
  • Step #7 3.
  • Step #8 Meanwhile spray 12x8-inch (2-quart) baking dish with nonstick cooking spray.
  • Step #9 Cut each tortilla in half; place 8 halves in bottom of sprayed baking dish, overlapping slightly.
  • Step #10 4.
  • Step #11 Spoon half of beef mixture evenly over tortillas.
  • Step #12 Spoon sour cream over beef mixture; spread evenly.
  • Step #13 Top with remaining 8 tortilla halves & remaining beef mixture.
  • Step #14 (Cover up tightly with foil wrap & Freeze for later OR cook as directed below…).
  • Step #15 5.
  • Step #16 (Thaw overnight if frozen) Heat oven to 350ºF.
  • Step #17 Bake at 350ºF for 25 mins.
  • Step #18 Remove from oven; sprinkle with cheese.
  • Step #19 Cover up; let this stand 5 mins or until cheese is melted.
  • Step #20 Sprinkle top with sliced cilantro & serve this with fresh sliced lettuce, salsa, tomatoes, black olives, etc… / Makes 6 large Servings at 6.
