Slow Cooker Herb Roasted Chicken Recipe

Ingredients
  • cooking spray .
  • 1/2 c kosher salt .
  • 2 tsps thyme, divided .
  • 1 tsp black pepper, divided .
  • 3-4 lbs young roasting chickens, rinsed, with neck & giblets removed .
  • 2 tsps oregano, divided .
  • 6 c water .
  • 2 tsps rosemary, divided .
  • 2 tbsps olive oil

Directions
  • Step #1 In a pitcher, salt, stir this together the water, thyme, & 1/2 tsp of pepper, 1 tsp each of rosemary, & oregano; whisk to mix.
  • Step #2 Set aside.
  • Step #3 Place the chicken into a large zip-top bag; pour reserved liquid mixture into the bag & seal.
  • Step #4 Place the bag into a large bowl & put in the fridge for 12-24 hrs.
  • Step #5 When ready to cook, coat the slow cooker (aka crockpot) crock with cooking spray.
  • Step #6 Drain & discard the marinated liquid, & place the bird into the slow cooker (aka crockpot).
  • Step #7 Rub the bird with the olive oil, then sprinkle with the remaining 1/2 tsp pepper, 1 tsp thyme, 1 tsp rosemary, & 1 tsp oregano.
  • Step #8 Turn the bird breast-side down in the crock.
  • Step #9 Cover up & cook on LOW for 6 hrs; check doneness with an instant-read thermometer (it should register 170).
  • Step #10 When done, let the bird rest in the covered slow cooker (aka crockpot) for 10 min before serving.
