Ingredients
  • 3/4 c granulated sugar .
  • confectioners' sugar, for dusting .
  • 1 1/2 tsps baking powder .
  • 3 tbsps lemon juice .
  • 1 lemon, zest of .
  • 1/3 c butter .
  • 1 1/2 c flour .
  • 1/3 c ricotta cheese .
  • 3 eggs, separated

Directions
  • Step #1 Grease a 9 inch round cake or springform pan.
  • Step #2 Line the bottom with parchment or waxed paper.
  • Step #3 Grease the paper.
  • Step #4 Dust with flour.
  • Step #5 Set aside.
  • Step #6 Preheat the oven to 350 degrees.
  • Step #7 Cream the butter & sugar together until smooth.
  • Step #8 Beat in the ricotta.
  • Step #9 Beat in the egg yolks, one at a time.
  • Step #10 Ass 2 Tbl of the flour, & the lemon zest & juice.
  • Step #11 Sift the baking powder into the ramaining flour & beat into the batter until well mixed only.
  • Step #12 Beat the egg whites until they form stiff peaks.
  • Step #13 Fold them carefully into the batter.
  • Step #14 Turn the mixture into the prepared cake pan.
  • Step #15 Bake for 45 mins, or until a cake tester inserted in the center of the cake comes out clean.
  • Step #16 Allow the cake to cool for 10 mins before turning it out onto a rack to cool.
  • Step #17 Dust the cake generously with confectioner's sugar before serving.
