Step #1 Cut the apricots into small pieces & let simmer in orange juice, along with cinnamon & orange peel for approximately five minuets or until soft & plump.
Step #2 First chop the 1/2 c of almonds.
Step #3 Toast the sliced nuts & 2/3 c coconut in oven or under grill, until slightly brown.
Step #4 Pour rice cereal, toasted coconut, light corn syrup, ground almonds, asnd the apricot mixture in a food processor/blender goblet & mix well.
Step #5 You will need to stop the machine & scrap the sides of the bowl once or twice as the mixture is quite sticky.
Step #6 Turn mixture into a bowl & add sliced almonds, dried fruit.
Step #7 mix by hand until the mixture forms a large ball.
Step #8 Line a baking tray with foil wrap or geaseproof paper & sprinkle with coconut.
Step #9 spread the mixture out, leveling the surface, & sprinkle with more coconut.
Step #10 Press down well, preferably overnight, cut into 12 pieces then leave to dry out, before storing in an airtight container( this allows the flavores to mix).
Step #11 If unput in the fridged use within a week.
