8 c red cabbage, thinly sliced (about 1 medium cabbage) .
1/4 c balsamic vinegar (if you don't have balsamic, red or white wine vinegar will do) .
1 medium carrot, grated .
1-2 tbsp olive oil (I always add 1 tbsp) .
salt & pepper, to taste .
2 tbsps Splenda sugar substitute or sugar
Directions
Step #1 Combine vegetables In a large-ish mixing bowl.
Step #2 In a microwavable bowl mix oil, vinegar, & sugar; Microwave uncovered for about 45 seconds to dissolve sugar - NOTE if you are using splenda omit this step.
Step #3 Pour hot dressing over vegetables; mix well.
Step #4 Refrigerate to mix flavours.
Step #5 Leftovers will keep a couple days in the fridge.
