Red Cabbage Coleslaw Recipe

Ingredients
  • 4 green onions, thinly sliced .
  • 8 c red cabbage, thinly sliced (about 1 medium cabbage) .
  • 1/4 c balsamic vinegar (if you don't have balsamic, red or white wine vinegar will do) .
  • 1 medium carrot, grated .
  • 1-2 tbsp olive oil (I always add 1 tbsp) .
  • salt & pepper, to taste .
  • 2 tbsps Splenda sugar substitute or sugar

Directions
  • Step #1 Combine vegetables In a large-ish mixing bowl.
  • Step #2 In a microwavable bowl mix oil, vinegar, & sugar; Microwave uncovered for about 45 seconds to dissolve sugar - NOTE if you are using splenda omit this step.
  • Step #3 Pour hot dressing over vegetables; mix well.
  • Step #4 Refrigerate to mix flavours.
  • Step #5 Leftovers will keep a couple days in the fridge.
