Peach Crumb Cobbler Recipe

Ingredients
  • 1/2 c sugar .
  • 1 tsp finely sliced fresh mint .
  • 2 tbsps soy margarine .
  • 1/2 c all-purpose flour .
  • 1/2 c packed light brown sugar .
  • 1 tbsp lemon juice .
  • 2 tsps cinnamon .
  • 2 tbsps orange juice .
  • 3 tbsps cornstarch .
  • 6 c peeled & sliced fresh peaches

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Spray 9-inch square deep-dish pie plate with non-stick oil.
  • Step #3 In a mixing bowl, sugar, mix peaches, lemon juice, & mint.
  • Step #4 Mix cornstarch & orange juice; let rest 15 mins, then mix into peaches.
  • Step #5 Pour peach mixture into prepared pie plate.
  • Step #6 Mix flour with brown sugar & cinnamon.
  • Step #7 Use a pastry cutter to cut margarine into flour until mixture resembles course crumbs.
  • Step #8 Sprinkle top over peaches.
  • Step #9 Bake 45 mins.
  • Step #10 Serve hot.
