Canadian Bacon Potato Soup Recipe

Ingredients
  • 1 (2 tbsp) packet Butter Buds (equivalent to 1/4 c butter) .
  • 2 c vegetable broth .
  • 2 medium onions, sliced .
  • 1/3 c chives, minced .
  • 4 medium potatoes, peeled & quartered .
  • 1/4 tsp salt .
  • 3 oz vegetarian Canadian bacon or Canadian bacon, sliced .
  • 1/8 tsp pepper .
  • 7 tbsps low-fat sour cream or low-fat yogurt .
  • 1 (12 oz) can fat-free evaporated milk

Directions
  • Step #1 In large saucepan coated with nonstick cooking spray saute onions until tender.
  • Step #2 Add potatoes & broth; bring to a boil.
  • Step #3 Reduce heat, cover & let simmer for 20-25 mins or until potatoes are very tender.
  • Step #4 Set aside 1 c potato mixture.
  • Step #5 Puree remaining mixture in batches in a mixer or food processor/blender & return to the pan.
  • Step #6 Stir in milk, bacon, salt, butter granules, pepper & reserved potato mixture.
  • Step #7 Heat through without boiling.
  • Step #8 Garnish each with 1 tbsp low-fat sour cream or yogurt & sprinkle with chives.
