Southern Fried Chicken
Ingredients
canola oil or vegetable oil or coconut oil .
1/4 tsp pepper .
1/2 tsp garlic salt .
5 dashes hot sauce .
2 eggs .
1/4 c chicken stock or broth .
1/3 c cornmeal .
4-5 pieces cube steaks, cutlet .
1/4 c pan drippings or bacon drippings .
1/2 tsp salt .
1/4 c evaporated milk (Pet of "like") .
1 tsp ground pepper .
1/4 c flour .
1 tsp paprika .
1/2 tsp salt .
1/2 tsp onion powder .
2 tbsps evaporated milk (Pet or "like") .
2/3 c flour .
2 1/2 c milk .
Gravy .
1/4 c milk
Directions
Step #1 In medium bowl, place first 7 "dry" ingredients & mix well.
Step #2 Set aside.
Step #3 In another medium bowl, place the next 4 "liquid" ingredients & use whisk to mix well.
Step #4 Set aside.
Step #5 Carefully transfer dry mixture onto a dinner plate.
Step #6 Start heating oil of your choice to a medium high heat in large skillet (Cast Iron is true Southern style).
Step #7 The oil should be about 1/4" to 1/2" deep & should not cover the entire cutlet.
Step #8 Take a cutlet & dredge in flour mixture.
Step #9 Take same cutlet & dip in egg mixture until entirely coated.
Step #10 REPEAT dredging same cutlet in flour mixture.
Step #11 Repeat process for each cutlet.
Step #12 Discard unused egg & flour mixtures.
Step #13 In well heated oil, carefully place cutlets & fry until golden brown on bottom.
Step #14 Turn each cutlet over to brown the other side.
Step #15 Each side should take about 4 - 5 mins.
Step #16 Place fried cutlets on paper towels to drain excess oil.
Step #17 Pour off all but 1/4 C grease from skillet.
Step #18 Heat to a Medium High temperature.
Step #19 Slowly add Flour whisking until well mixed.
Step #20 (Don't use leftover flour/cornmeal mixture).
Step #21 When the color slightly begins to darken, slowly add milk.
Step #22 Continue whisking to prevent lumps.
Step #23 Gravy will begin to bubble & thicken.
Step #24 Add evaporated milk & whisk well.
Step #25 Add chicken stock & whisk well.
Step #26 Add Salt & Pepper, mixing well.
Step #27 Allow gravy to simmer 2 mins on low heat.
Step #28 Turn off heat & allow to sit 2-5 mins before serving.
Step #29 Gravy will thicken nicely.
