Ingredients
24 oz V-8 juice (must be the hot & spicy) .
3 garlic cloves, minced .
1/2 tsp celery seeds .
1 (16 oz) package okra, sliced style .
1/4 tsp cayenne pepper .
1 medium onion, sliced .
8 oz tomato sauce .
1 c water .
3 c cooked rice, cooked measurement .
3/4 lb frozen salad shrimp .
1 tbsp olive oil .
1 medium bell pepper, sliced .
1 (14 1/2 oz) can crushed tomatoes .
1 lb fish fillets, cut into bite size pieces (I like Talapia)
Directions
Step #1 Pour olive oil into a heated soup pot.
Step #2 Saute the onion, & garlic in the oil until tender, bell pepper, but not over done.
Step #3 Add celery seed.
Step #4 Add V8 juice, okra, tomatoes, water, tomatoe sauce, & cayenne pepper.
Step #5 Bring to a boil & let simmer about 10 mins.
Step #6 Stir in fish & cook for approximately 8 more mins.
Step #7 Add shrimp & cook for about 5 more mins.
Step #8 Place a 1/2 c mound of rice in bowl & ladle gumbo over the rice.
Step #9 Serve with a green salad & crusty bread & you have a full meal.
