Miniature Pecan Pies Recipe

Ingredients
  • Cream Cheese Pastry Shells .
  • 1/4 tsp salt .
  • 1/2 tsp vanilla extract .
  • 1 c all-purpose flour .
  • 3/4 c brown sugar, firmly packed .
  • Pecan Filling .
  • 1/2 c butter or margarine, chilled & cubed .
  • 1 (3 oz) package cream cheese, chilled & cubed .
  • 1 c pecans .
  • 1 egg .
  • 1 tbsp butter or margarine, melted

Directions
  • Step #1 For the Pastry Shells: Position knife blace in food processor/blender bowl; add cream cheese & butter.
  • Step #2 top this with cover, & pulse 3-4 times or until mixd.
  • Step #3 add flour; process until dough forms a ball, leaving sides of bowl.
  • Step #4 Chill dough 2 hrs.
  • Step #5 Shape the dough into 24 balls; place each ball into greased 1 3/4-inch muffin tins, & shape into a shell.
  • Step #6 Set aside until ready to fill.
  • Step #7 For the Pecan Filling: Position knife blade in food processor/blender bowl; add pecans.
  • Step #8 Top with cover, & pulse 4 times or until pecans are evenly sliced.
  • Step #9 Remove pecans; set aside.
  • Step #10 Position knife blade in processor bowl; add egg, sugar, butter, vanill, & salt.
  • Step #11 Top with cover, & process until smooth.
  • Step #12 Fill each pastry shell 3/4 full iwth mixture.
  • Step #13 Sprinkle top on pecans.
  • Step #14 Bake at 325F F for 25--30 mins.
  • Step #15 Remove as soon as possible, & cool on rack.
