Step #4 On a floured surface, either pat down or roll this into two 10-11 inch circles.
Step #5 Place one circle on an oiled cookie sheet, & then sprinkle the cheese evenly over its surface.
Step #6 Spread the spinach across the top, & then cover with the remaining circle.
Step #7 Using your fingertips, carefully press the edges together.
Step #8 Create dimples across the top surface using your fingertips, & drizzle over with the oil.
Step #9 Sprinkle top the salt & rosemary on top.
Step #10 Bake for about 30 mins or until golden brown.
Step #11 Serve warm.
Step #12 Variation: Try stuffing the focaccia with thinly sliced tomatoes & basil leaves, shredded cooked ham & Fontina cheese, or simply a mixture of your favorite Italian cheeses.
