Apple Oat-bran Muffins Recipe

Ingredients
  • 2 large green cooking apples .
  • canola oil or olive oil, for oiling the muffin pan .
  • 1 (12 oz) can apple juice concentrate, thawed .
  • 1 1/4 c oat bran .
  • 2 c whole wheat flour .
  • 2 1/2 tsps baking soda .
  • 1 c unbleached white flour .
  • 1 c water .
  • 1 tsp cinnamon .
  • 1/2 tsp nutmeg

Directions
  • Step #1 Heat oven to 325°F Lightly oil muffin pan.
  • Step #2 Peel & core apples; chop them coarsely.
  • Step #3 Set aside.
  • Step #4 In a mixing bowl, baking soda, white flour, oat bran, stir this together pastry flour, cinnamon, & nutmeg.
  • Step #5 Add thawed apple juice concentrate, sliced apples, & enough water to make a light batter.
  • Step #6 Mix just enough to moisten all ingredients.
  • Step #7 Divide batter among the muffin c & bake till lightly browned, 25-30 mins.
  • Step #8 Remove muffins from c while hot.
