Ingredients
Filling .
Topping .
1/4 c whipping cream .
3/4 c sour cream .
Cream Sauce .
2 tbsps granulated sugar .
1/2 tbsp maple syrup or molasses .
1 tsp almond extract .
1 tsp vanilla extract .
1 c white corn masa harina .
Sweet Pink Tamale Dough .
2 c fresh strawberries .
1/4 c water .
1/2 c granulated sugar .
1 (8 oz) can strawberry pie filling or fresh sliced strawberries .
1 tsp fresh lemon juice .
2 tbsps softened butter .
3/4 c strained strawberry puree .
8 dry corn husks
Directions
Step #1 Place corn husks In a large-ish bowl with warm water.
Step #2 If the husks float up, place a smaller bowl of water on top of them to hold them down in the water.
Step #3 Let soak at least 30 mins.
Step #4 Tamale dough: Bring water, sugar, syrup & puree to boil over medium high heat.
Step #5 Reduce heat; stir in the Masa Harina.
Step #6 Simmer 10 mins.
Step #7 Stir in remaining ingredients.
Step #8 Mixture should roll this into a ball without sticking to your fingers.
Step #9 Spread pink dough onto husks, which have been softened in hot water.
Step #10 Leave a margin at each side.
Step #11 Place 1 to 2 tsps of strawberry pie filling in a line through middle of dough.
Step #12 Fold in both sides & press seam together, making sure strawberry filling stays completely inside the dough.
Step #13 Leave ends open.
Step #14 Roll husk & tie ends tightly.
Step #15 Steam for 45 mins to 1 1/2 hrs depending on thickness.
Step #16 Tamales will come easily off the husk & have a spongy texture when cooked.
Step #17 Cream Sauce: Whip cream.
Step #18 Slowly add sour cream & continue whipping until stiff peak stage.
Step #19 Add remaining ingredients.
Step #20 Chill until ready to serve.
Step #21 When ready to serve, dollop cream sauce on cooled sweet tamales.
Step #22 Top with strawberries.
