Spring Roll Dipping Sauce / Nuoc Mam Recipe

Ingredients
  • mint sprigs or sliced mint, 'releases more mint flavor' .
  • Garnish .
  • 2 c sugar .
  • finely grated carrots .
  • 4 tbsps fish sauce .
  • 1/2 tsp cayenne pepper .
  • 1 c rice wine vinegar .
  • 3 c hot water

Directions
  • Step #1 Combine water, vinegar & sugar & cook for 3-5 mins stirring to dissolve sugar.
  • Step #2 Remove from heat & add fish sauce.
  • Step #3 Add shredded carrots & mint.
  • Step #4 Taste & add more fish sauce & cayenne to taste.
  • Step #5 Cool before serving.
  • Step #6 Chopped chili peppers & finely sliced peanuts may also be added to warm sauce & then allowed to cool.
