Confetti Chicken Recipe

Ingredients
  • 1 tbsp sliced pimento peppers
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1 c sliced carrots
  • 1/2 c milk
  • 2 eggs, beaten
  • 3 c cubed, cooked chicken meat
  • 1/8 tsp ground black pepper
  • 1 c all-purpose flour
  • 1 1/4 c shredded Cheddar cheese, divided
  • 1/2 c sliced celery
  • 1 c sour cream
  • 1/2 c fresh sliced mushrooms
  • 1/2 tsp salt
  • 1 tsp Worcestershire sauce
  • 2 tsps baking powder
  • 1/4 c chicken broth
  • 3/4 c sliced onion
  • 1 tbsp thinly sliced green onion
  • 1 tsp salt

Directions
  • Step #1 In a large saucepan, onion, mix the carrots, celery, & chicken broth.
  • Step #2 Stir all together, & let simmer for 20 mins.
  • Step #3 In a 3-quart casserole dish, Worcestershire sauce, sour cream, mix soup, mushrooms, chicken cubes, salt & pepper.
  • Step #4 Add simmered vegetables & liquid; mix well.
  • Step #5 In a mixing bowl, mix the flour, baking powder & salt.
  • Step #6 Mix in eggs, green pepper, milk, pimentos & 1 c of the cheese until well mixed.
  • Step #7 Drop by spoonfuls on top of casserole.
  • Step #8 Preheat oven to 350 degrees F (175 degrees C).
  • Step #9 Bake in the preheated oven for 40 to 45 mins, or until golden brown.
  • Step #10 Sprinkle top with the remaining 1/4 c of cheese, & continue baking another 5 to 10 mins, or until cheese is melted & bubbly.
