Palomino Chop Chop Salad Recipe

Ingredients
  • 3 c julienne-sliced romaine lettuce .
  • balsamic vinaigrette .
  • 1 tbsp julienne-sliced fresh basil .
  • freshly cracked pepper .
  • 3/4 c balsamic vinegar .
  • 2 pasteurized egg yolks .
  • 3 finely minced garlic cloves .
  • 2 c olive oil .
  • 1/4 tsp black pepper .
  • 1/4 c julienne-sliced smoked turkey breast .
  • 1 tbsp garbanzo beans .
  • 3/4 tsp kosher salt .
  • 3 tbsps powdered parmesan cheese .
  • 2 tbsps italian provolone cheese, cut in 1/4-inch cubes .
  • sliced tomatoes (to garnish) .
  • 2 tbsps genoa salami or wine salami

Directions
  • Step #1 Make dressing in a mixing bowl.
  • Step #2 Whisk egg yolks for 2-3 mins, then add vinegar, garlic, salt & pepper.
  • Step #3 Whisk 2-3 mins.
  • Step #4 Slowly add oil to emulsify.
  • Step #5 Refrigerate until needed.
  • Step #6 Combine greens, garbanzos, provolone, basil, salami in a bowl; add ½ c dressing.
  • Step #7 Toss to mix.
  • Step #8 Add parmesan, turkey, & toss.
  • Step #9 Place salad on plate; top this with tomato.
  • Step #10 Serve with pepper mill.
  • Step #11 The restaurant offers this as 1 large serving but with crusty bread & a cold drink it is a very nice dinner for 2.
  • Step #12 Also great side for 4-6 servings.
