Black-eyed Pea Special Recipe

Ingredients
  • 1 small onion, sliced .
  • 2 stalks celery, sliced .
  • 1 small bay leaf .
  • 1/2 tsp salt .
  • 2 (10 oz) packages frozen black-eyed peas (You can also use 2 14-oz cans, drained & rinsed) .
  • 3 slices bacon .
  • 1 (16 oz) can tomatoes, undrained .
  • 2 tbsps sliced green peppers .
  • 1 tsp worcestershire sauce .
  • 1 1/2 c water .
  • 1/4 tsp pepper

Directions
  • Step #1 Fry bacon in a Dutch oven until crisp.
  • Step #2 Remove bacon, reserving drippings in the pan.
  • Step #3 Crumble bacon & set aside on paper towels to drain.
  • Step #4 Saute the celery, onion, & green pepper in bacon drippings for 5 mins.
  • Step #5 Add the rest of the ingredients.
  • Step #6 Bring mixture to a boil.
  • Step #7 Cover up, reduce heat, & let simmer for 1 hr 10 mins, or until peas are tender.
  • Step #8 Remove bay leaf & stir in the bacon before serving.
