Mango Sherbet (helado De Mango) Recipe

Ingredients
  • 1/4 c sugar .
  • 2 egg whites .
  • 1/2 c light cream .
  • 1/4 c lemon juice, fresh .
  • 1 dash salt .
  • 1/2 c sugar .
  • 2 mangoes, peeled & sliced .
  • 1 c water

Directions
  • Step #1 Combine water, 1/2 c sugar, & salt in saucepan.
  • Step #2 Cook 5 mins, & cool.
  • Step #3 Combine mangoes & cream in mixer container.
  • Step #4 Blend til smooth.
  • Step #5 (Or, mash mangoes with a fork & add cream stirring to incorporate.
  • Step #6 ).
  • Step #7 Stir in cooled syrup & lemon juice.
  • Step #8 Divide & freeze mixture in two freezer containers until partially frozen (you can use one container, but it will take longer).
  • Step #9 Meanwhile chill a mixer bowl.
  • Step #10 In a separate bowl, beat egg whites to the soft peak stage.
  • Step #11 Gradually add 1/4 c sugar to the egg whites, & continue beating until the peaks are stiff.
  • Step #12 Add contents of freezer containers to the chilled bowl, & break into chunks.
  • Step #13 Beat with a mixer until smooth.
  • Step #14 Fold in beaten egg whites.
  • Step #15 Return to the freezer containers, & freeze until firm.
