Irish Cream Cheesecake Recipe

Ingredients
  • 350 g cream cheese (12oz) .
  • Filling .
  • 225 g milk chocolate (8oz) .
  • To serve .
  • 3 tbsps irish cream .
  • oil, for brushing .
  • 175 g chocolate chip cookies (6oz) .
  • 425F ml double cream, whipped (15floz) .
  • 55 g golden caster sugar (2oz) .
  • 225 g chocolate (plain, 8oz) .
  • creme fraiche .
  • fresh fruit .
  • 55 g butter (2oz)

Directions
  • Step #1 Line the base of a 20cm/8-inch springform tin with foil wrap & brush the sides with oil.
  • Step #2 Place the cookies in a polythene bag & crush with a rolling pin.
  • Step #3 Place the butter in a saucepan & heat carefully until just melted, then stir in the the crushed biscuits.
  • Step #4 Press the mixture into the base of the tin & chill in the refrigerator for 1 hr.
  • Step #5 FILLING.
  • Step #6 To make the filling, melt the plain & milk chocolate together in a water bath.
  • Step #7 Stir to mix & leave to cool.
  • Step #8 Place the sugar & cream cheese In a large-ish bowl & beat together until smooth.
  • Step #9 Fold in the whipped cream.
  • Step #10 Fold the mixture carefully into the melted chocolate.
  • Step #11 Stir in the Irish cream liqueur.
  • Step #12 Spoon the filling over the chilled biscuit base & smooth the surface.
  • Step #13 Cover up & leave to chill in the fridge for 2 hrs, or until quite firm.
  • Step #14 Transfer to a serving plate & cut into small slices.
  • Step #15 Serve with a spoonful of crème fraiche & fresh fruit.
