Souffle Al La Vanille Recipe

Ingredients
  • 1/8 tsp salt .
  • 3 tbsps all-purpose flour .
  • 1/4 c sugar .
  • 3 tbsps butter or margarine, softened .
  • 1/4 c sugar .
  • 1/4 tsp cream of tartar .
  • 1 tbsp vanilla .
  • 5 eggs, separated .
  • 3/4 c milk

Directions
  • Step #1 Mix 1/4 c sugar, the flour & salt in 1 quart saucepan.
  • Step #2 Stir in milk slowly.
  • Step #3 Heat to boiling, stirring constantly.
  • Step #4 Remove from heat.
  • Step #5 Beat egg yolks with for,; beat in 1/3 c of the milk mixture.
  • Step #6 Stir in remaining milk mixture slowly.
  • Step #7 Stir in butter & vanilla.
  • Step #8 Cool slightly.
  • Step #9 Place oven rack in lowest position.
  • Step #10 Heat oven to 375 degrees.
  • Step #11 Butter & sugar 2 quart souffle dish.
  • Step #12 Make 3 inch band of triple thickness aluminum foil wrap 2 inches larger than circumferance of dish.
  • Step #13 Butter & sugar one side of the band.
  • Step #14 Extend dish by securing band buttered side in around outside edge.
  • Step #15 Beat egg whites & cream of tartar in large mixer bowl until boamy.
  • Step #16 Beat in 1/4 c sugar, 1 Tbl at a time; continue beating until stiff & glossy.
  • Step #17 Do not underbeat.
  • Step #18 Stir about 1/4 of the egg whites unto egg yolk mixture.
  • Step #19 Fold in remaining egg whites.
  • Step #20 Carefully pour this into dish.
  • Step #21 Bake until puffed & golden brown, about 1 hr.
