Step #1 In a mixer, mix the cilantro, jalapeño, garlic, vinegar & water & puree.
Step #2 Transfer to a bowl & whisk in the mayonnaise.
Step #3 Cover up & put in the fridge.
Step #4 In a shallow bowl, lightly beat the eggs.
Step #5 In another shallow bowl, mix the flour, salt & pepper.
Step #6 Spread the potato chips in a third bowl.
Step #7 Lightly coat the chicken with the flour, shaking off any excess, then dip in the beaten eggs.
Step #8 Coat the chicken with the potato chips.
Step #9 Heat the oil In a large-ish nonstick skillet until shimmering.
Step #10 Add the chicken & cook over moderately high heat until golden & cooked through, about 5 mins per side.
Step #11 Transfer to plates.
Step #12 Serve at once with the cilantro sauce.
