Spaghetti & Taco Meatballs Recipe

Ingredients
  • 1 tbsp lime juice .
  • 12 oz spaghetti .
  • 1 egg .
  • 1 lb ground beef .
  • 3/4 c shredded Mexican mix cheese or monterey jack cheese or cheddar cheese or queso quesadilla cheese or asadero cheese .
  • sour cream (optional) .
  • 1 (26 oz) jar marinara sauce .
  • extra cilantro (optional) .
  • 4 tbsps sliced fresh cilantro .
  • 2 tsps grated lime zest .
  • 1/4 tsp pepper .
  • 1 (1 1/4 oz) envelope taco seasoning, such as old el paso's .
  • 1/2 tsp salt .
  • 2 tbsps plain breadcrumbs .
  • 2 scallions, sliced 1/4 c .
  • 1 tbsp canola oil

Directions
  • Step #1 In bowl mix beef, egg, 1/2 c cheese, 2 Tbs.
  • Step #2 cilantro, scallions, 3 Tbs.
  • Step #3 taco seasoning, breadcrumbs, 1 tsps zest, lime juice, salt & pepper.
  • Step #4 Shape into 18 meatballs using scant 2 Tbs.
  • Step #5 mixture per ball.
  • Step #6 In large nonstick skillet heat oil over medium-high heat.
  • Step #7 Add meatballs; cook, turning every once in awhile until browned, about 5 mins.
  • Step #8 Drain, if necessary.
  • Step #9 Add pasta sauce & remaining cilantro, taco seasoning & zest.
  • Step #10 Cover up; reduce heat to medium-low.
  • Step #11 Simmer until meatballs are no longer pink in center, about 15 mins.
  • Step #12 Meanwhile cook spaghetti according to package directions; drain.
  • Step #13 Transfer to serving platter: top this with meatballs & sauce.
  • Step #14 Sprinkle top with remaining cheese; garnish with sour cream & cilantro if desired.
