Spicy Chicken Curry (diabetic/ Crock Pot) Recipe

Ingredients
  • 2 medium onions, sliced .
  • 1 tsp ground cloves .
  • 1 c low-fat plain yogurt .
  • 1 tsp salt .
  • 1 tsp ground cardamom .
  • 1 tsp ground cumin .
  • 1 tsp ground coriander .
  • 3 tsps turmeric .
  • water .
  • 1 tsp garlic .
  • 1 tsp ground cinnamon .
  • 2-3 red potatoes, sliced .
  • 1 tsp pepper .
  • 1 tsp red pepper flakes .
  • 1/2 tsp chili powder .
  • 1 tsp ground ginger .
  • 1 (10 oz) package frozen spinach, sliced, thawed, squeezed dry .
  • 4 lbs skinless chicken pieces, with bones

Directions
  • Step #1 Place (cleaned) chicken In a large-ish slow cooker (aka crockpot).
  • Step #2 Cover up with water.
  • Step #3 Cover up pot & cook on high for 2 hrs or until tender & drain the chicken & remove this from the slow cooker (aka crockpot).
  • Step #4 Cool briefly & cut & shred into small pieces & return to the slow cooker (aka crockpot).
  • Step #5 Add remaining ingredients & cover & cook on low for 4-6 hrs or until potatoes are tender.
  • Step #6 Serve on top of rice with mango slices or chutney.
