Step #1 Preheat oven to 400°.
Step #2 To prepare the green tomatoes, mix flour & next 4 ingredients (flour through sugar) in a shallow dish.
Step #3 Dip tomato slices in milk; dredge in flour mixture.
Step #4 Lightly coat both sides of tomato slices with cooking spray.
Step #5 Place a baking sheet in oven; heat at 400° for 5 mins.
Step #6 Remove from oven; as soon as possible coat with cooking spray.
Step #7 Place tomato slices on preheated baking sheet.
Step #8 Bake at 400° for 25 mins, turning after 15 mins.
Step #9 To prepare the gravy, melt butter in a medium nonstick saucepan over med-heat/flame.
Step #10 Add mushrooms & onion, & cook 4 mins or until tender, stirring frequently.
Step #11 Add sliced red tomato; bring to a boil, & cook for 10 mins or until liquid almost evaporates.
Step #12 Stir in 1/4 tsp salt & 1/4 tsp pepper.
Step #13 Spoon the gravy over the tomato slices.
