Country Crunch Pancakes Recipe

Ingredients
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 c fresh or frozen blueberries
  • 2 eggs, lightly beaten
  • 2 tbsps vegetable oil
  • CRUNCHY TOPPING:
  • 2 tbsps sugar
  • 1/2 c quick-cooking oats
  • 1 tsp ground cinnamon
  • 1/3 c quick-cooking oats
  • 2 tsps baking powder
  • 1/3 c whole wheat flour
  • 2 c all-purpose flour
  • 1/4 c sliced slivered almonds
  • 1 tsp baking soda
  • 1/4 c packed brown sugar
  • 2 1/4 c buttermilk

Directions
  • Step #1 In a mixing bowl, oats, mix flours, sugar, baking soda, baking powder, salt & cinnamon.
  • Step #2 Combine buttermilk, eggs & oil; stir in theto dry ingredients just until mixed.
  • Step #3 Fold in blueberries if desired.
  • Step #4 Combine topping ingredients; sprinkle about 1 tsp for each pancake onto a lightly greased hot griddle; pour 1/4 c of batter over topping.
  • Step #5 Immediately sprinkle with another tspful of topping; turn when bubbles form on top of pancake.
  • Step #6 Cook until second side is golden brown.
