Zucchini Florentine Recipe

Ingredients
  • 1 (2 oz) envelope cream of spinach soup mix (Knorr's) .
  • 1 1/2 c milk .
  • 1/2 c sliced shallots .
  • 1/8 tsp freshly grated nutmeg .
  • 3 tbsps butter .
  • 2 c shredded zucchini .
  • 1/4 c grated parmesan cheese

Directions
  • Step #1 In a 10-inch skillet over med-heat/flame, melt the butter.
  • Step #2 Add in the shallots; stir/saute for 2 mins or until softened.
  • Step #3 Add in zucchini; stir/saute for 3-4 mins.
  • Step #4 Stir in soup mix, nutmeg, milk, & cheese until well mixd.
  • Step #5 Bring the mixture to a boil; keep warm over low heat/flame until ready to serve.
