Crispy Chicken Flautas Recipe

Ingredients
  • 1/2 poblano peppers, sliced .
  • salt & pepper, to taste .
  • cooking spray .
  • 4 chicken breasts, bone in .
  • 1/2 green bell pepper, sliced .
  • 1 onion, sliced .
  • 1 c canned tomatoes, drained & sliced .
  • 2 tbsps chicken stock, plus extra for tortillas .
  • 12 corn tortillas

Directions
  • Step #1 Spice up chicken with salt & pepper & roast in oven for about 1/2 hr.
  • Step #2 When it's cooked through, remove bones & skin & shred the chicken.
  • Step #3 Heat the chicken stock in a sauté pan over med-heat/flame.
  • Step #4 Add onion & peppers & sauté until onion is translucent.
  • Step #5 Add tomatoes & shredded chicken & let simmer for 10 mins.
  • Step #6 Remove from heat, cool & drain any excess liquid.
  • Step #7 Soften tortillas with a bit of chicken stock & place chicken mixture in the center.
  • Step #8 Roll up tightly & seal with two toothpicks.
  • Step #9 Spray lightly with cooking spray.
  • Step #10 Place seam side down on medium flame on grill & turn while cooking until crispy - about 5-7 mins.
  • Step #11 You can also bake them in a preheated 375F oven about 20 mins until crisp.
  • Step #12 Remove from grill, cut in half & remove toothpicks.
