Diabetic Popcorn Crunch Recipe

Ingredients
  • 3 tbsps molasses .
  • 1/3 c sugar .
  • 1 tsp vanilla .
  • 1 tbsp water .
  • 10 c low fat microwave popped popcorn

Directions
  • Step #1 Spray a large baking pan with nonstick spray.
  • Step #2 Set aside.
  • Step #3 Preheat oven to 375°F.
  • Step #4 Remove & discard unpopped kernels from popcorn & set aside.
  • Step #5 In a small saucepan, molasses, mix sugar, water & stir this to mix well.
  • Step #6 Cook over med-heat/flame stirring with a wooden spoon until it comes to a full boil.
  • Step #7 Boil stirring constantly for 1 min.
  • Step #8 Remove from heat.
  • Step #9 With a wooden spoon, stir in the vanilla.
  • Step #10 Mix well.
  • Step #11 Very slowly drizzle syrup over the popcorn, stirring well to coat evenly (keep fingers away from hot syrup).
  • Step #12 Spread popcorn evenly in the pan.
  • Step #13 Bake on centre oven rack 5-6 mins until popcorn begins to crisp slightly.
  • Step #14 Remove from oven & stir.
  • Step #15 Let cool.
  • Step #16 Syrup will harden & popcorn will crisp further as it cools.
  • Step #17 When cool store this in a sealed plastic bag or airtight container for 2-3 days (if it lasts that long!).
  • Step #18 EXCHANGE: 1 carbohydrate.
