Mini Honey Cheesecakes Recipe

Ingredients
  • 1/3 c caster sugar .
  • 1 lemon, zest of, finely grated .
  • 4 eggs .
  • 1 tsp ground cinnamon .
  • 1/3 c honey .
  • 250 g ricotta cheese

Directions
  • Step #1 Beat ricotta, sugar & honey In a large-ish mixing bowl until smooth & well-mixd.
  • Step #2 Add the eggs one at a time, beating well as each egg is added.
  • Step #3 Blend in the cinnamon & the lemon rind.
  • Step #4 Spoon the mixture into 6 lightly greased friand moulds or into 8 lightly greased recesses in a muffin pan.
  • Step #5 Bake in a moderate oven (180ºC) for 20-25 mins or until firm.
  • Step #6 Allow to cool & serve this with a drizzle of extra honey, a dollop of cream or mascarpone, & berries.
