Pineapple Apricot Cookies Recipe

Ingredients
  • 1 c sugar .
  • 3 large egg yolks .
  • 6 c flour .
  • 1 c shortening .
  • 1 tsp salt .
  • 1 (8 oz) can crushed pineapple, drained .
  • 11 oz apricots, sliced, drained .
  • 1 c butter .
  • 1 cake yeast, crumbled .
  • 2 c sour cream

Directions
  • Step #1 Combine pineapple, apricots & sugar in saucepan.
  • Step #2 Cook untl thickened, stirring frequently.
  • Step #3 Cool.
  • Step #4 Cut shortening & butter into flour & salt in bowl.
  • Step #5 Combine yeast with sour cream & egg yolks in a bowl.
  • Step #6 , mix well.
  • Step #7 Add to crumb mixture & mix well.
  • Step #8 Chill for 3 hrs or overnight.
  • Step #9 Roll on sugared surface & cut into 3" squares.
  • Step #10 Spoon fruit filling into centers of squares, bring up edges to enclose filling & seal.
  • Step #11 Place on cookie sheet.
  • Step #12 Bake at 350° for 10-12 mins or until golden brown.
  • Step #13 Remove to wire racks & cool completely.
