Finnish Cranberry Whip (vatkattu Marjapuuro) Recipe

Ingredients
  • 1/3 c farina .
  • 1 c granulated sugar .
  • 2 c fresh cranberries .
  • 1 c water .
  • 1 dash salt .
  • 1 1/2 c water

Directions
  • Step #1 Heat cranberries in 1 1/2 c water to boiling; reduce heat.
  • Step #2 Simmer uncovered until berries pop, about 8 mins.
  • Step #3 Press cranberries through sieve to remove skins.
  • Step #4 return juice to saucepan.
  • Step #5 Add sugar, 1 c water & the salt; heat to boiling.
  • Step #6 Add farina slowly, stirring constantly.
  • Step #7 Cook, stirring every once in awhile, until thickened, 3 to 5 mins.
  • Step #8 Pour into small mixer bowl.
  • Step #9 Beat on high speed until pudding becomes fluffy & light pink, 3 to 5 mins.
