3 stalks green onions, trim roots & mince (reserve about 1/2 tsp for egg topping) .
For Egg Topping .
Any type of left over cooked Meat cut small such as .
Optional .
1 tsp sesame seed oil .
Any type of left over cooked Vegetable cut small such as .
Add any of the following to your liking (the recipe assumes all leftovers & vegetables are cooked) .
red pepper flakes .
1/2 c bean sprouts .
10 mushrooms, sliced .
1 tbsp vegetable oil .
4 c white rice, prepared & cooked .
bits of roasted kombu seaweed (or any type of laver) .
1 tsp toasted sesame seeds .
2 eggs, beaten .
cooked beef or cooked pork or cooked chicken .
1 tbsp vegetable oil .
1 pinch salt .
2-3 tbsps soy sauce (if dark use only 2)
Directions
Step #1 RICE.
Step #2 1) In pan, vegetables, add oil, meat, rice & any other extra left over ingredients you choose.
Step #3 Cook for about 5-7 mins on medium-high heat stirring & covered the last 3 mins on medium-low heat.
Step #4 2) Add soy sauce at the end to preserve taste & benefits of soy sauce & remove this from heat.
Step #5 Mound it on a plate & place to the side.
Step #6 EGG TOPPING.
Step #7 3)Place vegetable oil in a small frying pan & spread around well so that it covers the entire pan.
Step #8 4) On low heat slowly put beaten eggs in pan.
Step #9 Cook like you would an omelet without folding.
Step #10 (nice & happy, flat eggy) Make sure it is throughly cooked.
Step #11 5) When egg is cooked flip the egg onto the fried rice & drizzle on the sesamee oil.
Step #12 Sesamee oil has more healthy benefits when it's not cooked.
Step #13 6)add the following the sesamee seeds, green onions plus if you choose, crumbled roasted seaweed, pinch of red pepper flakes.
Step #14 7) salt & pepper to taste & eat up while hot!
My dad & brother would of course cover this all with ketchup if it didn't have the kimchee while my mom would use her hot pepper paste.
Step #15 I just liked mine plain.

Step #17 You can use the egg topping method for the entire plate of rice or make individual egg toppings for each person.
