Cinnamon Walnut Brittle Recipe

Ingredients
  • 1 tsp vanilla extract
  • 1 c sugar
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 c sliced walnuts
  • 1 tsp butter
  • 1/2 c light corn syrup

Directions
  • Step #1 Butter a baking sheet; set aside.
  • Step #2 In a 2-qt.
  • Step #3 microwave-safe bowl, mix sugar & corn syrup.
  • Step #4 Microwave, uncovered, on high for 3 mins; stir.
  • Step #5 Cook, uncovered, on high 2-1/2 mins longer.
  • Step #6 Stir in walnuts, butter & cinnamon.
  • Step #7 Microwave, uncovered, on high for 2 mins or until mixture turns a light amber color (mixture will be very hot).
  • Step #8 Quickly stir in the baking soda & vanilla until light & foamy.
  • Step #9 Immediately pour onto prepared pan; spread with a metal spatula.
  • Step #10 Cool; break into pieces.
