S.o.s. (stuff On A Shingle) Recipe

Ingredients
  • 5 tbsps all-purpose flour (heaping spoons full) .
  • salt & pepper .
  • 1 1/2 lbs lean ground beef .
  • 2 c hot water .
  • 1/2 c celery (sliced) .
  • 1/2 c bell peppers (Chopped) .
  • 2 1/2 c onions (coarsely sliced) .
  • 1/8 tsp cayenne pepper (optional) .
  • 1/2 tsp ground nutmeg (the secret ingredient) .
  • 1 tbsp butter .
  • 2 (8 oz) cans sliced tomatoes with juice .
  • 1 (12 oz) can tomato juice (V8 is better) .
  • 1/2 tsp granulated sugar (or sugar substitute)

Directions
  • Step #1 In a deep heavy pot, brown the butter & then brown the meat in browned butter.
  • Step #2 Add onion, pepper & celery & cook till they just start to soften.
  • Step #3 Spice up with salt & pepper.
  • Step #4 Without draining off fat or juices, stir in the enough flour to absorb all liquids.
  • Step #5 Stir in Tomatoes, hot water & tomato juice.
  • Step #6 Cook over med-heat/flame, stirring constantly till mixture starts to thicken.
  • Step #7 Stir in Nutmeg & continue to cook for about five mins to insure flour cooks.
  • Step #8 If you don't think it is thick enough, add some more flour well mixed in cold water.
  • Step #9 Serve hot over toast, pancakes or corn bread, biscuits, even a bagel.
  • Step #10 Freeze leftovers in individual serving in sealed sandwich baggies.
