Drunken Stuffed Figs Recipe

Ingredients
  • 24 fresh figs
  • 1 c mascarpone cheese
  • 1 c cognac
  • 1/2 c confectioners' sugar
  • 2 tbsps sliced fresh mint leaves
  • 1 1/2 c toasted hazelnuts

Directions
  • Step #1 Using a marinade injector baster, inject figs with about 1 tbsp cognac, dividing the amount equally amongst the figs.
  • Step #2 Chill in the refrigerator while preparing remaining ingredients.
  • Step #3 In a medium bowl, mix remaining cognac, mascarpone cheese & 3/4 of the confectioners' sugar.
  • Step #4 Chill in the refrigerator while preparing remaining ingredients.
  • Step #5 In a mixer or food processor/blender, mix toasted hazelnuts, mint leaves & remaining confectioner' sugar.
  • Step #6 Place the mixture in a medium bowl.
  • Step #7 Remove stems from figs, & cut in half lengthwise.
  • Step #8 Fill halves with equal portions of the cognac & mascarpone cheese mixture.
  • Step #9 Roll in the hazelnut mixture.
  • Step #10 Arrange on a medium serving platter, cheese side up, & chill in the refrigerator until serving.
