Moroccan Pilaf Recipe

Ingredients
  • 1/3 c dried currants (or raisins) .
  • 1/4 tsp cayenne pepper .
  • 1/2 tsp ground cinnamon .
  • 1/3 c whole almonds, blanched .
  • salt .
  • 1 carrot, peeled, cut into 1/4-inch pieces .
  • 1 c long grain brown rice (or white) .
  • 2 tbsps snipped fresh chives .
  • 2 tbsps olive oil .
  • pepper .
  • 1 minced orange, zest of .
  • 1 small onion, sliced .
  • 3 c chicken broth (or stock)

Directions
  • Step #1 Preheat oven to 375*F.
  • Step #2 Lightly oil a shallow 1 1/2 quart ovenproof casserole.
  • Step #3 Heat the oil In a large-ish skillet, & saute the almonds over med-heat/flame until they are browned & fragrant, 3 mins.
  • Step #4 Stir in the onion, carrot, & cinnamon.
  • Step #5 Cook 3 more mins.
  • Step #6 Add the rice & cook, stirring, until translucent, about 1 min.
  • Step #7 Stir in the broth, currants, orange zest, cayenne pepper, & salt & pepper to taste.
  • Step #8 Bring to a boil; remove this from the heat.
  • Step #9 Transfer the mixture to the prepared casserole & bake, uncovered, until the liquid has been absorbed & the rice is tender, about 45 mins.
  • Step #10 Sprinkle top with chives, & serve.
